Makers Gonna Make: Horchata Recipe

Horchata—a beverage typically made from ground rice, almonds, sesame seeds, barley, and/or tiger nuts—is popular in South America, Spain, and Puerto Rico. It can be made with countless different ingredients and the base will not always be the same, but the drink itself almost always resembles a creamy, cinnamon-flavored delicious milkshake!

This recipe is a great start for creating your own personal horchata. Feel free to spice it up with nutmeg, cocoa, or even other nuts like peanuts and cashews. Enjoy cold or hot; both are equally tasty!

Ingredients:

  • 1 cup of long-grain white rice, rinsed
  • ½ cup of sugar (or to taste)
  • 2 cinnamon sticks
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of ground cinnamon

Tools

Measuring cup, measuring spoons, blender or food processor, cheesecloth, pitcher

Let’s do it!

  1. Combine your rice with 4 cups of water in a blender, and pulse until it is coarsely ground up.
  2. Transfer your rice mixture into a large bowl, add another 4 cups of water, and soak at room temperature for 3 hours.
  3. Pure the mixture in a blender in batches until it is smooth.
  4. Strain through a cheesecloth into a pitcher and mix with sugar and vanilla extract.
  5. To serve, stir the horchata well, pour into ice-filled glasses, and garnish with a dusting of ground cinnamon.

This recipe combines the subtle aroma of lavender with the classic flavor of cold, refreshing lemonade. Its vibrant and beautiful hue makes this a fun beverage for the kids to enjoy on a hot summer day or for moms to turn into cocktails for a rejuvenating night in with friends. You can even consider serving this simple drink at your next BBQ, picnic, dinner party and more! The combination of citrus and floral undertones will make this drink a hit, no matter who you’re serving it to or what you’re serving it with.

When using lavender in recipes, I find it’s best to use fresh lavender (but you can easily use dried lavender for this recipe as well). Just remember; use lavender sparingly. Like rosemary, this highly fragrant herb doesn’t take much! Too much and your risk your recipe tasting like our Lavender soap (great for showers, not so great for beverages).

Ingredients

  • 6 cups of water
  • ½ cup of sugar
  • ¼ cup of honey
  • 3 tbsp of lavender (pull the flowers off the stem before measuring)
  • 2 cups of fresh squeezed lemon juice
  • Lemon slices and sprigs of lavender for garnish (optional)

Let’s do it!

  1. Combine water and sugar in a large pot over medium heat and bring to a boil under the sugar is dissolved.
  2. Turn off the heat and stir in honey and lavender.
  3. Allow your mixture to steep for 2 hours (1 hour if you want less of a lavender flavor), keeping the heat off.
  4. Strain the liquid, removing the lavender, and mix in your fresh squeezed lemon juice.
  5. Pour into a large pitcher, serve over ice with some lemon and lavender as garnish, and enjoy!

Citrus All-Purpose Natural Cleaner

One of the first things I changed when I started going natural was my cleaning products. A big motivator was ridding my house of the terrible smell of most cleaners. I am not one who is comforted by the scent of bleach, especially since it seems to hang in the air for hours. Then there’s the environmental impact of all those chemicals going into the water system and just hanging out on my counters and sink. It just did not seem pleasant or responsible. Of course, there are a plethora of natural cleaning products out there but once I realized how easy it was to make my own I figured there was no point in purchasing them. Plus, I can use the money I save on a fancy coffee and a donut. 😉

With a few simple ingredients that are probably already in your kitchen like vinegar, dish soap, and citrus, you can mix up this effective natural cleanser. My favorite recipe consists of citrus infused vinegar but if you don’t want to bother, you can just skip that part and add in essential oils instead.

Why these Natural Ingredients Work

Citrus Peels: Peels of citrus fruits contain the essential oils which are naturally powerful degreasers and deodorizers, making them great for cleaning. 

Vinegar: Clear acidic liquid byproduct of fermentation of fruits and grains for alcohol. Distilled White Vinegar is about 5% acetic acid and 95% water. The acetic acid combined with vinegar’s pH of 2, naturally inhibits the growth of bacteria and mold. A 2010 study showed that a 10% dilution of Malt Vinegar (acetic acid of 5-8%) was as effective as commercial cleaning wipes at killing the H1N1 Flu virus*. NEVER mix Bleach and Vinegar – harmful chlorine gas is the result!  

All Purpose Natural Cleaner Recipe Citrus Peel Vinegar

Part 1 – The Citrus Vinegar

I love this because it uses a bunch of citrus peels that I’d normally just compost. I typically start a jar of vinegar and just keep adding peels to it over the course of a few weeks.

Ingredients
Peels from 1-3 lemons, oranges, grapefruits or pomelos
1/2 cup – 1 cup vinegar, depending on how many peels you have

Cut peels from your citrus of choice being careful to avoid the pithy white parts and put into a clean glass jar (plastic is not a good choice for this project).

TIP: I use peels from lemons I’ve used in cooking and baking – just squeeze juice, then cut away peel and add to jar of vinegar.

Add enough vinegar to cover peels.

Let peels and vinegar co-mingle for at least 2-4 weeks.

Part II – The All-Purpose Natural Cleaner

Ingredients
1/2 cup – 1 cup citrus infused or regular distilled vinegar*
1/2 cup – 1 cup distilled water
1/4 – 1 tsp of natural dish soap
*If you don’t have citrus vinegar you can add 15-20 drops of essential oil – any combination of lemon, lime, orange, rosemary, tea tree and eucalyptus would work well.

Collect all ingredients and equipment for the recipe (measuring cups, bottles, measuring spoons, funnel).

Measure out the distilled vinegar and add to the bottle.

Thanksgiving Classic with a Twist Version

It’s the food holiday to end all food holidays so obviously it’s my favorite day of the year (besides my birthday). I love testing new recipes but Thanksgiving is definitely a time for all the classics like stuffing, mashed potatoes, turkey, etc. Here are a few of my favorite thanksgiving recipes that give those classics just the slightest update.

Cranberry Relish: This recipe is both ridiculously easy and ridiculously tasty. Of course, it comes from my food crush, Anthony Bourdain.

Italian Sausage + Bread Stuffing: I love this slight tweak on classic stuffing recipes. Up the herb anti by adding fresh sage, thyme, and rosemary.

Duchess Baked Potatoes: These will change your life. Seriously. People go crazy over them (it’s probably all the heavy cream and eggs) and you can make them ahead and reheat. Perfect for the Thanksgiving cooking marathon.

Arugula Persimmon Salad with Avocado: This sounds delicious and a great contrast to all the heavy Turkey day classics. I may just throw in some pomegranate seeds too for good measure.

Dry Brined Roast Turkey: Dry brining sounds about 10,000 times easier than a traditional brine so you better believe I’m going to test this one out.

Apple Pandowdy: Who doesn’t love a simple dessert. Like an apple but easier.

 

 

Makers Gonna Make: Ginger Vanilla Almond Butter

Almonds and almond butter have been all the rage for the last few years and I’m guilty of jumping on the bandwagon. I’ve spent tons of $$ on almond butter. But it was so damn good, especially in smoothies, and on bread and with bananas…clearly the list could go on. When I finally got my hands on a Blendtec blender, I started whipping up my own because it’s ridiculously easy and I can control exactly what goes into it (seriously love that blender more than almost anything, except my soda stream…). This recipe came about after trying some of the amazingly inventive butters from Big Spoon Roasters (who we also happen to do a limited edition soap colab with – sadly sold out but stay tuned). The flavors of this butter are great for fall (or anytime, really). Slater over toast, add to a smoothie or just eat straight from the jar. Enjoy!

Ingredients

  • A cup of almonds
  • 1 tbsp coconut oil
  • ¼ tsp vanilla
  • A pinch of salt
  • 2-3 pieces of candied ginger
  • A pinch of cinnamon
  • 1 or 2 tsp of honey

Tools
Blender, 8 oz jar, roasting pan, measuring spoon, measuring cup, spatula

Let’s do it!

  1. Roast the almonds in the oven at 350° for 10-15 minutes, let them cool for 10 minutes before using them
  2. Put 2-3 pieces of candied ginger into blender, pulse until pieces are broken down almost to a paste (unless you want chunks them pulse until they’re at the desired size)
  3. Add the room temp roasted almonds
  4. Add a couple shakes of cinnamon, coconut oil and vanilla.
  5. Add a pinch of salt
  6. Add 1 or 2 tsp of honey
  7. Blend all the ingredients together until smooth
  8. Store the butter in a tightly sealed container in the fridge or dig in immediately!

Tips:

  • Add a 1 tsp to 1 tbsp of sunflower oil to obtain a more creamy consistency
  • Replace cardamom for the cinnamon, yum.
  • You can store your almond butter in the refrigerator for up to 10 days. Remove from the fridge 15-20 minutes before you want to dig in for the best texture!

Makers Gonna Make: Grapefruit Cardamom Rose Cooler Recipe

This recipe combines two of my favorite flavors (grapefruit and cardamom) together in one cooling, sweet and tart beverage. Perfect for warm days. I’ve been a grapefruit lover for as long as I can remember. As a kid, I’d always asked my grandma Etta for half a grapefruit for breakfast (no sugar) cut just the right way (Etta was the only one who knew how to do it correctly) so that I could scoop out the flesh and create  “grapefruit soup”. It’s still my favorite way to eat a grapefruit. I developed a deep love of cardamom while exploring the world of soapmaking. It’s spicy, herbal, sweet notes are incredible in both desserts and savory items. Plus, it blends beautifully with citrus and most stone fruit.

I brought these two lovely scents together in the Grapefruit Cardamom line of products at Etta + Billie 7 years ago and I’m still obsessed. Which is how I came up with the recipe for this Grapefruit Cardamom Rose Cooler. Check out the video I made for the recipe with written directions below.

Ingredients

  • ¼ – ½ tsp rose water (this is surprisingly flavorful so start with a little and increase as desired)
  • ¼ tsp or more cardamom
  • ½ – 1 whole peeled pink grapefruit
  • 1 cup of Water
  • Ice

Tools
blender, measuring spoons, a glass

Let’s do it!

  1. Add half grapefruit in the blender
  2. Put ¼ teaspoon of rosewater
  3. Add 1/2 teaspoon of cardamom
  4. Toss in 4 or 5 ice cubes
  5. Pour in a cup of water
  6. Blend until obtain a silky smooth (I have blendtec and set it to fresh fruit or smoothie mode)
  7. Pour into a glass and enjoy!

DIY is a real mixed bag for me because I love a good project but I also want my thing to look like it does on the interwebs (ahem, like everyone else on the planet). Thankfully, I’ve got a great sense of humor which helps me relate to all those craft mishaps here plus I acknowledge the ridiculousness of obsessing over Pinterest perfect photos all the time (ain’t nobody got time for that). That being said, this lip scrub DIY is actually really useful (lip care is no joke) and very hard to f-up so the photos are going to be darn pretty and your lips are going to be super soft and healthy. Make the lip scrub and social media bomb your followers. You’re welcome.

Ingredients

  • 1 tbsp virgin coconut oil (better if organic)
  • ½ tsp sunflower oil or olive oil (also better if organic)
  • 1 + 1/2 tsp brown sugar (even better if organic, are you starting to notice a trend?)
  • 1 + 1/2 tsp turbinado sugar (you can double the amount of brown sugar if you don’t have turbinado sugar. And guess what? organic is preferred)
  • ¼ tsp grated lemon peel (optional and you don’t need to be precise – ALSO please make sure this is organic if nothing else unless you like pesticides in your lip scrub, then you do you*)

Tools
Small bowl, whisk, spoon, grater, a couple of small jars and clean hands

Let’s do it!

  1. Take a small bowl and add 1 tbsp of virgin coconut oil
  2. Add 1/2 tsp of sunflower oil and mix well with coconut oil using the whisk
  3. Add 1 + 1/2 tsp of brown sugar
  4. Add 1 + 1/2 tsp of turbinado sugar and mix until fully blended
  5. Grate about ¼ tsp of lemon peel to add a gentle scent and touch of alpha hydroxy acids
  6. Mix all the ingredients together
  7. Fill your jars using a spoon

Tips
Add an additional ½ tsp of brown sugar or turbinado sugar if you want an intense treatment. Sugar’s crystalline structure is better for more delicate facial skin including lips.

This lip scrub will stay good for about 2-3 weeks if you keep it in your fridge or at least out of your bathroom.

*So why is organic my go to? Well, besides the reduction in exposure to super nasty chemicals for myself and my loved ones, it’s better for the environment (think less chemicals leaching into waterways, oceans, forests…you get the picture) and better for the farmer workers (think about how much direct exposure they deal with every day as part of their job).
