With the whole family home and work schedules busier than ever, the last thing many of us want to do is prepare and cook a meal at the end of a long day. To make matters worse, it seems that quarantine has inspired an upsurge in cravings for comfort food, leaving many of us to resort to labor-intensive dishes. Frittatas are the epitome of one-pot breakfast dishes. This Spring Frittata from Minimalist Baker is the perfect combination of spring ingredients and flavors. Saute the toppings of your choice, top with eggs, and throw in the oven and viola! You’ve got a beautiful egg dish that will please everyone.

The perfect meal for those leftover veggies you’ve got lying around in the fridge. Roast up just about any veggies of your choice- squash, carrots, or cabbage with some aromatic onions and garlic. About halfway through, toss in halloumi (a feta-like salty cheese) and pita chips for a last round in the oven.
A fresh all in one noodle dish. No special noodles required- you can use spaghetti! Toss in vegetables like carrots, cabbage, and green onions before coating in a savory peanut sauce.
